Zucchini Quinoa Bites

 

These yummy bites are full of flavour and are easily customizable to your favourite flavour profile! Easy to make and easy to eat. This basic recipe makes 12-16 Bites.

Instructions :Prepare quinoa by combining 1/2 cup quinoa with 1 cup water in a small pot; bring to a boil. Reduce quinoa to a simmer; cover and cook for 10 minutes or quinoa is translucent. *optional: Use a flavoured stock to add extra flavour to the quinoa. Remove from heat and fluff with a fork. Let cool.
Grate zucchini and sprinkle with 1/2 teaspoon salt. Place mixture into a colander and let sit for 15 minutes.
Wring zucchini dry with paper towel. Add zucchini, quinoa, egg, garlic, basil, oregano, pepper, salt, cheese and panko into a large mixing bowl; mix until well combined. Heat olive oil in a skillet. Form zucchini-quinoa bites into 2 inch patties. Add patties to skillet, flatten slightly with a fork and cook until golden. Each side takes about 4 minutes. Remember not to over crowd the skillet, this allows for better and even cooking.
When golden and crisp, remove the bite and place onto a paper towel-lined plate.
Serve warm with your choice of dipping sauce.

2 cups zucchini - grated
1/2 teaspoon salt
1 cup water
1/2-cup quinoa
1 egg
3 garlic cloves - minced
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon black pepper
1 cup fresh Parmigiano-Reggiano cheese - grated
1 cup panko bread crumbs
Salt to taste
3 tablespoons olive oil

Other fresh additions:
Green Onion
Red or White
Onion - finely minced
Carrot - grated
Ginger - grated or finely minced
Chili Flakes
Jalapeno - finely minced
