Healthy Dinner Ideas for a Romantic Valentine's Day Dinner at Home

When you cook a romantic dinner for two this Valentine's Day, invite healthy ingredients to celebration. Lean meats and nutrient-rich vegetables produce dinners that you can fall in love with.

Flank steak is a relatively lean cut of beef. This dinner recipe includes the ingredients for a chimichurri sauce that you serve with the steak. Before cooking your meat and asparagus on a medium-high grill or griddle, sauté chopped cauliflower and scallions in oil and salt. Set them aside to keep warm while you grill your steak and asparagus. Slice the meat thin when serving alongside your vegetables.

The rosy colour of salmon fits the theme of Valentine's Day. The fish's rich flavour ensures a stimulating dinner experience as well as nourishing you with anti-inflammatory omega-3 fatty acids. For the vegetable side, slice zucchini, trim green beans and chop broccoli. Boil everything except the zucchini and add some peas to the pot. Pan fry the zucchini in a little oil. Now, pan fry your salmon portions in olive oil. Cook about 3 to 4 minutes on each side. Drain your boiled vegetables and add cream cheese and pesto to the vegetables. Add the zucchini and stir until vegetables are coated with creamy sauce.

This classic vegetarian dish never goes out of style. Silky eggplant portions in tomato sauce and covered with mozzarella cheese create a hot and healthy dinner on a chilly Valentine's Day.

Slice eggplant into 3/8-inch-thick pieces. Salt the pieces generously and leave them to drain in a colander for at least 30 minutes. Pat eggplant dry with paper towel. Heat oil in a pan and dredge eggplant in flour and seasonings. Gently load eggplant pieces into the hot oil and fry until golden. Remove them to paper towels. In another frying pan, cook tomatoes in olive oil and reduce the sauce by half. Meanwhile slice cheese very thinly. Make a layer of eggplant in an oiled baking dish. Spread the tomato sauce over the pieces and cover with cheese slices. Build another layer. Bake for 30 to 40 minutes.
