1. Classic French onion soup

It is very pleasing to the eyes as it comes out of the oven with caramelized melted cheese. It can be accompanied with other dishes or eaten as a meal. Brown yellow or red onions in a pot and add broth along with seasonings. Simmer for one hour until the onions become plump. Meanwhile, toast the French baguette with olive oil until golden brown. Pour the soup into an oven-safe bowl and top with the toast. Add shredded Gruyere or Swiss cheese on top of the toast and broil until the cheese melts.


2. Roasted butternut squash cream soup


Squash and pumpkins are in season during the fall, making this soup extra flavourful. Butternut squash is mild and sweet with a hearty texture that is perfect for making creamy soups. This soup can also be made with pumpkin or sweet potatoes instead of squash. To make this recipe, simply start by putting cubed-size chunks of butternut squash on a baking sheet, adding salt, pepper, and olive oil. Broil until the squash is tender and the edges are golden brown. In a pan, sauté scallions and sage and reduce by adding broth. Puree the butternut squash with heavy cream or coconut milk until the desired consistency is reached. Fold the puree into the broth until well combined and serve with croutons.


3. Cheesy baked potato soup


Potatoes are a staple ingredient that are very comforting during colder months. This soup is hearty enough to eat on its own or to be accompanied by a sandwich or crackers. It is a creamy chunky soup that can be customized with any favourite toppings. Start by simmering cubed potatoes in broth until tender. Place half in a blender and puree until smooth. Return puree to the pot and mix with the remaining potatoes along with sour cream and seasoning. Serve in a bowl and top with shredded cheddar cheese, green onions, bacon, or any favourite combination of toppings. For a variation, the soup can be served in an oven-safe dish and broiled until the cheese melts and becomes caramelized.
