It is a creamy chunky soup that can be customized with any favourite toppings. Start by simmering cubed potatoes in broth until tender. Place half in a blender and puree until smooth. Return puree to the pot and mix with the remaining potatoes along with sour cream and seasoning. Serve in a bowl and top with shredded cheddar cheese, green onions, bacon, or any favourite combination of toppings. For a variation, the soup can be served in an oven-safe dish and broiled until the cheese melts and becomes caramelized.
