Butternut Squash and Apple Soup
A simple soup, this is the perfect liquid to warm you up after a day of apple picking or hiking through crisp leaves. The ingredients you need include:
-Drizzle of olive oil
-1 small leek, chopped,
-1 butternut squash, cubed
-2 apples, peeled and cubed
-Diced carrots
-Chicken stock
-Heavy cream (optional)
-Nutmeg (to taste)
Start by sauteing the leek in olive oil. Once it is soft, add the stock and other vegetables and fruit. Let the mixture simmer on the stovetop until everything is soft. You will then use an immersion blender to create a smooth soup. If you want a creamier variety, you can add a little bit of heavy cream. Add nutmeg to taste.
Pumpkin Soup
